Mahon DOP 4 Month is a traditional Spanish cow’s milk cheese produced exclusively on the island of Menorca in the Balearic Islands and protected under DOP (Denominación de Origen Protegida) status. Recognizable by its distinctive square shape and orange-hued rind, traditionally rubbed with oil, butter, and paprika during aging. Mahon reflects the island’s coastal terroir, where sea breezes, mineral-rich pastures, and generations of cheesemaking tradition shape its character. Aged approximately four months, this semi-cured style balances youthful creaminess with the deeper complexity that develops during maturation. 

Creamy, buttery, and beautifully balanced, Mahon DOP 4 Month offers notes of toasted hazelnuts, cultured butter, sweet cream, and fresh pasture with a gentle salinity and subtle citrus tang. The texture is supple yet firm, with a smooth, slightly elastic paste that melts exceptionally well. Rich without being heavy, it is equally at home on a cheeseboard, shaved over vegetables, melted into sandwiches, or served with Marcona almonds, crusty bread, Spanish charcuterie, and Rioja or Albariño.
